What is milk?
Milk is a very rich raw material made of complex ingredients with a great number of uses, people over many years have found for it. Milk contains sugar, water, fat, proteins and minerals, for example calcium...
No food contains all the nutrients the body needs. But thanks to the rich ingredients milk has, it is the most complete food that exists. Its proteins are necessary to renew our cells and support our body. Dairy calcium is easily digested and transformed by our organism. It is essential for regenerating our bones.
How is yoghurt produced?
Milk is mixed with specific bacteria that are the base for fermentation (Lactobacillus bulgaricus and Streptococcus thermophilus).
Fermentation of dairy products guarantees their soft acidity and fresh taste, and their excellent digestibility, since the milk bacteria have already “predigested” the lactose.
The SENOBLE Dairy in Zvolen has acquired modern manufacturing technology, guaranteeing production efficiency and a quality product. All manufacturing stages are automated with no human intervention that could be a source of contamination.
Raw cow’s milk is first skimmed and pasteurized, the amount of fat is subsequently adjusted and in all cases a small bit of dehydrated milk is added. This guarantees the yoghurt has proper density. Eventually, sugar is also added.
This mixture is pasteurized again and chilled to approximately 44°C before the yoghurt cultures are added, ensuring the milk ferments and transforming it into yoghurt. The entire process takes place in large fermentation tanks. While the yoghurt is being conditionned in cups, fruit can be added. The conditionned yoghurt is then refrigerated and stored at a temperature of 4°C.
Strict testing is carried out at each step: when milk is supplied and at every stage of the process. These are comprehensive microbiological tests and physical – chemical tests. Only high quality and safe products are allowed to reach the consumer.
